During the fair, we conducted several interviews with some very exciting producers. We were able to pull out some of the more interesting elements of Italian wine within the slow wine movement. Tune in each week on Italian wine podcast. Hi. I'm Cynthia Chapman, and I'm here today at slow wine in bologna with Alberto Paltrinieri from Emilia Romagna. And today, we're going to talk about Alberto's cantina Paltrinieri where he makes Lambrusco sorbara I'm very excited about this because I love Italian Rosati, and sorbara is the type of Lambriscoe that is the pink one. Grass Barosa is the dark, dark purple one. So we're gonna talk all about sorbara. So Welcome, Alberto. Thank you for coming. When did your cantina start making sorbara? Well, actually, the cantina, the one who was founded by my grandfather, more or less one hundred years ago. Wow. It's a long story. In fact, we have a one of our bottle. The name is Radice Radesha Mince root. The label is an abstract of the map, just to say we live here Oh, how did you go? Not from yesterday. No? Exactly. Along his history. And August. And what sort of wines? What style of wines are you making at your cantina now with sorbara? You know, sorbara normally is a blend of two grapes because sorbara, the flour, the raffles, the flour of sorbara, as a problem. Exactly. It doesn't make a fruit. Exactly. And, well, the self, pollination is not so easy. So you have, a big problem in terms of, loss of quantity because you have normal barrier with the seed inside and little barrier. It makes this high level of hostility. Yes. But also a loss of quantity. So to have, not a big problem, for this agronomic uh-uh reason that became in in the year after the consortium was born. Is required to plant. It's not a choice. Right. You have to plant. It's a requirement or else your vineyard is not going to make any grapes. No. No. And and the and also for the rules for the domination, you have to plant two plants of Surbada and one salami. Yes. In the past, the plan were in the same row. So the plan was directly done. Field blend, we say. Field blend. Exactly. Now, the last thirty year, also for the mechanization other technologies. You have rows of sovara distinguished by Rosa Salamino, so you can collect in a separate way. And then this duty, this, presence of Salami, you know, is you can have a choice. Exactly. In the one. It became in this year a possibility for a lot of several different Absolutely. Winery. And I'm really happy about this point because this means territory, you know, this means to make to try to to to start a new way that other Why? Other producers aren't following. It means that the the idea was not, so bad. No. Of course. Well, you've got a bottle in your hand. Exactly. Let's see what's it called. What's in this bottle? The is a survival one hundred percent, tank fermentation, thermal method. It's, our highest quality. Also, with Radice, that I say before is our highest quality comes normally from that all this vineyard and we we use the free run juice. Right. Okay. Free run juice is very important. So no press same. No pressing because you see that, well, we don't do maturation. So it's a silvera. So the color is really It's the real color. It's really color.
