Fine tuning is, a group of, three guys, that we met for the first time in a winery that we can say that is Mazi. And that it was done on two thousand. January. Yeah. Fourteen. Twenty fourteen, where we met for the first time. Oh, it's very first. I think that it's a long journey that only started on two thousand fourteen. It will be a journey that it will be much longer than today. The reason because we are doing that here is related to three things. First, history. I just came out from, from Champagne, and I saw that, everybody they are starting by by talking about the history. And the history is that this place is the place where a gentleman, many years ago, wrote the European law. And, I feel that if you want to visit the the library and the and the that there is here is absolutely something fantastic that, all our tree, we got a chance to read some pages of these bookers when we were here. Second things is people. I think that, it's a group of people that They're not sharing in the same passion, but they are sharing also the same ethical behavior and some, goals that we want to achieve, in our, in our life. And if I'm in the wrong place. For sure. Yeah. It's the pen. It's the pen. And the third things is that, for sure, we love wine and we love great food. So today, we brought also Manuel a manuela. We are sure that chef emmanuelle that, it will be the next, chef, the next time in Sri Lanka, he would be he would be the first one. And in any case, we spend many evenings in this place, Gabri, if you want to say something about that. You know, this place has been, I would say, a p bottle please. Now I don't wanna see the cornerstone of the preparation for, for our part, but this has been a reference place, a benchmark place to to come to and to meet with other people and to store the wine, do all these you know, sharing of, thoughts and strategies and tactics and everything. So we, we have been here several times for several years, and we realized only only this year, we said, okay, we were together. It was me and Brett. It was always it was like Feragosa the day after, which he came in to to help him to prevent. We were like, geez, it's fantastic. This should be shared. This should be done every single year because this is something that really defines where the wine world is going. And how how people react to the movements, how people embark into different interpretation of using the old, stylistic, new features, the the vintages themselves, I mean, we we can taste year after year. So that was something we needed to share. We we didn't want to waste all this patrimony that we created over the months, I I say. And, and that's why it's it's it's it's three of us. It's it's the fine tuning group because we want to really make sure that we get it right regardless what it is. We wanna get it right. And, if you But what is it that you guys did? I don't understand. Yeah. No. What is the fine tuning? I I what do you what do you mean by fine tuning? Fine tuning? What is it that you did? Like the wines that we see, what what do they represent? But they represent what you can find today in the wine world in terms of wine. The most representative wine in terms of style in terms of quality. There is a range. A very there is a very wide range of wines from, two euros to, probably grand cru, let's say. So how many wines? Hundred and sixty. One sixty. Yeah. Today, we are sharing one hundred and sixty wines. There is not an event in Italy that are presenting in one day, in one shot, this number of wine. So when is it? Is it you said Elazi wine customer? Yes. That they'll be something that will be happen every year. That it will be something that will be happen every year. That it will be something that will be happen every year. That is not an event in Italy where you can taste Bordeaux, Rioca, Bernelo, pinot noir, the same table, in the same table with wine people, or we can invite also some other people in the future if you want. So this is the purpose. This is the purpose to to to see if you want to be contemporary. If you want really to be updated in the wine business, you need to know what happened in the wine business. But the underlying, objective was to prepare for sound? No. No. No. No. No. No. That is because, Gabri will say something. We were here in August. That was the day before, Feragosto. And we say, and Gabri say, Oh, this guy changed the start of the wine and I say, Hey, Gabri This is something that we have to do every year because it's a, a window on the wine business where you can really have a look of what's happening all around the world. And if you want, if you want to. And do do you guys have tasting those? Yeah. Well, this is not about everything that is on. Everything. Yeah. Everything. Where do how do I access that? We're not gonna share that. No. You know, things things can happen sometime by step. These these three guys met, a few years ago. It was not a very in the be in in the beginning. It was not love at first sight. Yes. That's first. First. Yeah. And after that, we developed a respect for each other because we have different way of working a different way of, I think, different values But we, there is a main object that is inside our group that is the respect and the ethical approach to things, and that is the way that is part of our, our development in the future. I don't I don't care if we are the best in Italy or if you are not with this is not our ambiance. This is But do you have like similar tasting notes? I'm just curious. Let let let's get you. Okay, Pete. Let's go. I think what is interesting at the end is that everyone has it's on metal. Right. It's not rushed to the testing. So at the end, it's, the nice picture. The big picture is, a combination of, maybe, the, approach of Andrea and the precision for, for and this methodology to the testing. While and crew. It's it's very distanced is the best. The most, perfume, the probably and, flowery, and testing notes. Is it a Gabriella. Gabriella. Yes. And I tried to make the I tried to make the sentences between, the most. He's the doctor. We could, you know, him. You're the professor. No. I'm the boss. The boss. Oh, the boss. It's the boss. You're the doctor. It is the g g, the grand cru. Oh, okay. So I tried to make a synthesis between, this. It's not easier. So these guys, they are buying things of our expenses. Hey, guys. We we have budget. Let me say, we need, we need, we need a budget if you want to buy that. So who buys the wine? You buy the Vuitton and he buys the Jose. Yeah. I drink. He has a moral holistic approach, and a more probably the scientific, more detailed in the way making, and He has the most scientific. Gabrieta has the most scientific in winemaking? No. He's not the most scientific. Is there and I think that is the reason because he got the the the master of wine first because is really the most passionate about tasting certain type of wines and it is completed disjointed. This is correct, disjointed? Yes. Between the tasting and production. We have an influence from production. And some Because you come from wine. Yeah. Yeah. Yeah. Yeah. Sometimes it takes them to say, come on, guys. This stuff. This is this is a holistic way of that was a chance to, I think, to to show in the proper way, but there is no the first or second, the third. I don't think this is a fine tuning project that I will think that it will craft in the future, they're done in my business. No. I think it's terribly interesting. At the end, I can tell you what we have done. You can really apply to the everyday work and your everyday job. This really changed. Give me give me a concrete example. Okay. Give you a concrete example. Yes. Because you're a good example. Okay. Yeah. This is what's buying. We we we were in londo without money. Anything it was buying grand cru, the best stuff. And you say, Gabri, we cannot do that. He was in the sicilian approach. Oh, guys. Tomorrow, I'm leaving for a for a wedding, sicily. I'm leaving for a wedding, sicily. His exam is approaching. And after you have the Veneto guy, the tell was with the cattle with everything was in process. How was the who was the Bennettagon? Oh, you're this? I'm gonna use the time table. The gun is in my hand always. Always. That's Bennett. See, that's not very Bennett. I'm sorry. No. You remember how we rented the in apartment in London? They were looking for flower and I said, we need a table. He said, you need to pick the apartment by the table. And he was looking for a flower? Yeah. Flower. It was okay. This guy is cool. It tastes wise. He cannot pass through this light. I was known that by the time we we started to decide. But this was one. How many years ago? Seventy. That is important. Yeah. We rent an apartment in all on the park and the last the last level, and we ship it to Holland Park two full bottles of wine. Shit. You guys are all I can say is that you guys are incredibly dedicated. Mhmm. And I think Italian mine is very lucky to have you guys. Yeah. With that, let's drink.
